Award Winning Chef!Without even meaning to do it, I won my first cooking award! I'm pleased (and amused) to tell you it's for Most Creative Use of Girl Scout Cookies. Hey, not everyone can say they have this award!
I met the director of Hudson Valley Girl Scouts at a Rensselaer County Regional Chamber of Commerce networking breakfast in Spring 2004. She invited me to participate in a major fundraising event the organization has held for three years, called Cookie Cuisine. The challenge is to create entrees (real dinner!) out of Girl Scout cookies. It sounded so impossible I had to accept. So, what did I make? The award was for my Double Dutch Posole Burritos. I also made Samoa Feijoada. Double Dutch are chocolate cookies with chocolate chips. Samoas are plain cookies with caramel, chocolate and coconut flakes. The burritos contained hominy grits, double dutch cookies, red onion, garlic, tomatoes, chiles, chili powder, cilantro and they were in whole wheat or sun-dried tomato wraps. They tasted pretty spicy! The Feijoada is a traditional Brazilian dish usually made from leftover meats. Mine was meatless, containing tempeh, tamari, garlic, onion, olive oil, samoas, vegetable stock, bay leaves, cumin, fresh-squeezed orange juice and fresh-squeezed lime juice, served with basmati rice. This tasted fruity. My goal was to come up with something that tasted like food, not dessert, use the cookies as a main ingredient -- cooked right into the food in some substantial quantity -- relax and have fun. I succeeded in all those things. The event is fun, and if you are interested in doing something to support Girl Scouts, I can definitely recommend it! |
